Gobhi, in my opinion is one of the most under appreciated vegetables and also often falsy classified as mundane. It is however one of my favorites because of how easy to cook and delicious it is. This is why I chose to start my cookery blog with this simple recipe to prepare aloo-gobhi!

Ingredients -
- Oil - 2 tbs
- Rai - 1/2 tsp
- Jeera - 1 tsp
- Heeng - pinch
- Ginger - 1 tbs
- Small gobhi chopped in medium sized pieces with stem - 1
- Medium sized potato - 1-2(your choice) chopped in long pieces
- Haldi - 3/4 tsp
- Green chillies - 3 to 4, julians
- Dhania pwd - 1tsp
- Little red chilli - 1/4 tsp
- 1/2 cup green peas
- Garam masala - 1 pinch
- Salt - 2 tsp (adjust according to taste)
Method -
- Heat pan and add oil (make sure pan is dry)
- When oil is hot (put 2-3 jeera in it and when they splutter, you'll know the oil is hot enough) add rai + heeng + jeera
- Stir for 30seconds
- Now add ginger paste and again stir for few seconds
- Add chopped gobhi + aloo + green chilli + salt + haldi + dhania + red chilli and mix well
- Cover the pan and let the vegetables cook in their juice, stirring every few minutes for 7-8 minutes
- On the side, microwave (for 1.5 mins)/boil(for 5 mins) the green peas in water
- Strain peas and add to sabzi
- Cook open for another 2-3 minutes, stirring delicately
- Sprinkle a pinch of garam masala once cooked
- Garnish with freshly chopped cilantro
