Aloo Gobhi

Gobhi, in my opinion is one of the most under appreciated vegetables and also often falsy classified as mundane. It is however one of my favorites because of how easy to cook and delicious it is. This is why I chose to start my cookery blog with this simple recipe to prepare aloo-gobhi!
Preparation time - 10mins
Cooking time - 15mins

I think I am a good cook. Not a fine cook, not an original one but a good cook because I always manage to do a decent job given the resource and time costraints. Constrained by resources because we usually do groceries just once a week and really hate wasting food because of which we shop for only as much as we need. Now, although my husband and I have been living away from home for about 6 years, we are still learning how to run a household and can easily go wrong with our grocery estimates. I think we usually do a pretty good job of it but are always looking for ways and methods to optimise. We don't have kids or responsibilities other than each other, so we shouldn't really be constrained on time except that we always are! We have regular 9-5 jobs, get home by 6-6:30pm and then cook dinner. It was one of our new year resolutions to have early dinner is why an hour is all we have to come up with a tasty and balanced dinner. On a regular day, the aim is to have dal, roti, sabzi, chawal, salad and raita ready by 7:30pm. We manage to meet this deadline only half of the time and are actually quite proud of ourselves for it!

I have been meaning to post my recipes here for a while now, but kept postponing for the want of doing it perfectly. By perfectly, I mean with pictures of the dish during each phase of preparation and maybe even videos. I have spent almost a month procrastinating and realised that I'm always in too much of a hurry while cooking and that adding the pictures and videos as a package might not happen any time soon. Then I remembered why I wanted to make this journal! I needed an easy look-up for myself while I cook and also because I wanted to share how I manage to make a wholesome Indian meal in less than an hour. That is the USP of my journal! I also happened to stumble upon this quote in the book that I am reading - "Done is better than perfect". So, I decided that it would be nice to get the ball rolling and then add pictures and details as and when I find time.
